Oleo Saccharum and Super Juice: Two Ways to Pull Aroma From the Peel
We all love finishing a cocktail with a spray of citrus oil from the peel. It's a lovely touch, and it rounds out a recipe better than almost anything else. But squeezing the peel by hand is far from the only way to get that aroma out.
Oleo Saccharum: a technique on record since 1670
There's a serious aromatic bomb hidden inside citrus peel, and squeezing it is not the only way to open it up. Bartenders have used a technique for this since 1670, when it already shows up in punch recipes. It's called oleo saccharum, literally "oil sugar".
Oleo saccharum is a way to pull a thick, highly aromatic syrup out of citrus peel, fresh herbs, or fruit by mixing them with sugar. On contact with sugar, the peel gives up its water along with the essential oils, and the sugar absorbs them. That's how you end up with a rich, concentrated syrup.
How to make it
Mix the peel with granulated sugar, not powdered sugar or a sweetener, in a one to one ratio, stir well, and give it a light muddle. Leave it at room temperature for 12-24 hours: not in the fridge, and never heated, that part is non negotiable. In that time the peel gives up all its syrup, which you just need to strain.
What you get is a syrup with a brix of around 70%, though that shifts depending on what you used to make it. If the syrup is too thick for what you need, dilute it with water or citrus juice, adding half to a full volume relative to the peel.
For example: You started with 100g of lemon zest and 100g of sugar. Add 50–100 ml of water to make a less thick syrup.
What works for oleo
- Citrus, peel only: lemon, lime, orange, grapefruit, pomelo, mandarin, yuzu, bergamot, kumquat (cut in half).
- Fresh herbs and leaves, needs muddling: mint, basil, tarragon, rosemary, thyme, sage, oregano, shiso, lemon balm, lemongrass (fresh, firmly bruised stalks only), coriander, dill including the green umbels, eucalyptus leaves (fresh and moist only).
- Fresh rhizomes, sliced or grated: ginger, turmeric, galangal, horseradish root (releases a sharp allyl mustard oil).
- Conifer needles, young moist shoots only: spring shoots of spruce, pine, fir. Old needles won't work, there isn't enough cellular water left to start osmosis.
- Fresh flowers, need heavy muddling with the sugar: rose petals, fresh lavender (flowers and young stems only), elderflower.
The same principle works with fruit, banana peel for example, and you'll get a strongly aromatic result. Technically it's not oleo anymore, it's maceration, since fruit peel doesn't hold essential oils. The process itself doesn't change.
Super juice: the same idea, with acid instead
A lot of bartenders now use super juice, a way to get noticeably more usable juice out of lemon or lime than a plain squeeze gives you. Bartender Nickle Morris introduced the technique in 2020.
Super juice runs on a process very close to oleo. Instead of sugar, it uses dry organic acids. On the surface the two look alike, but acid interacts with the oil and water in the peel differently. Oleo gives you a thick syrup. This gives you a drier mix that carries the aroma just as well, minus the sugar. The full super juice recipe is easy to find elsewhere; what matters here is the logic of the acid mix.
Getting the acid ratio right
Worked example
An acid mix for one litre
Aim for a total acidity (TA) of around 6%, roughly what you'd find in a lemon or lime. It helps to blend acids rather than lean on one: 70% citric acid for the bright core acidity, 25% malic acid to soften it, and 5% ascorbic acid for stability and colour.
Mix your acid blend with citrus peel in a one to one ratio, muddle it, and let it sit at room temperature for about 2 hours, no longer. Say you use 60g of acid mix and 60g of peel. Add 940ml of water to bring it to roughly one litre, mix thoroughly, and strain.
What works for super juice
- Citrus, the base of super juice: lemon, lime, grapefruit, orange, mandarin. A blend of citric and malic acid, sometimes with a touch of tartaric or ascorbic, pulls the terpenes out cleanly.
- Conifer needles and woody herbs: pine needles and spruce shoots are a good source of pinene, the acid strips the oils off the tough needle surface without breaking down the structure. Juniper berries need a light crush first. Rosemary handles acid extraction well thanks to its dense leaves and gives a strong camphor profile.
- Dense fibrous stalks: lemongrass needs to be bruised with the back of a knife and finely chopped, that's what lets the dry acid pull out citral, its main essential oil.
