That Bartender Project · Speaking
Nia Nova
& Oleg Volovei
We build the software bartenders use to design drinks — and we talk about what that changes for a bar.
Why book us
Most bar talks are about recipes.
Ours are about what a recipe costs.
We are not performers doing a flair set. We built a physics engine for cocktails, we run a bar-education brand, and we speak from the numbers behind both.
Built, not borrowed
Every claim on stage comes from a product we wrote ourselves — 523 ingredients, 100 classic templates, 1,756 verified flavour pairs, all from our own research.
Bar floor and boardroom
Oleg worked four years of real shifts. Nia built brands for P&G and Nestlé. One of us knows the pour, the other knows the P&L.
Made for translation
Short sentences, no idioms, no wordplay. Our talks are built to work through a live interpreter, and we deliver in English or Russian.
Who we are
Two founders.
One engine.
That Bartender Project is a bar-education brand and a software company. We publish guides, we consult for bars, and we build Cocktail Architect — an app that calculates a drink before it is poured.
Four years behind the bar — Julien Gastro Bistrot, Dayzi, Casaroz. Milk washing, fat washing, 10+ menu cocktails, house vermouth. Wrote the guide to the classics, then taught himself to build the engine.
Close to a decade in brand, growth and creative direction — P&G, Nestlé, ShopLC, and wine. WSET Level 1 in Wines. Leads strategy, marketing and everything the audience sees.
What we talk about
Three talks, ready to run.
Each one is 10 to 45 minutes, with or without slides, solo or as a two-hander.
Technology & Innovation for Cocktail & Menu Development
What software changes about designing a drink: balance, dilution, and the cost per serve, all decided before anything is poured. The talk we gave at HorecFex.
The Invisible Bill
Three things a bar pays for every month and never sees on an invoice — product poured away during development, pour cost calculated too late, and a standard that lives in one bartender's head.
From Behind the Bar to Building Software
How four years of real shifts turned into a physics engine. For hospitality-tech and innovation audiences who want the founder route, not the feature list.
How we work
We travel, and we work in public.
We work on the move — filming, meeting bar teams, and speaking. We come with our own bar kit, our own slides, and a talk written for your room rather than recycled from the last one.
What you get: a rehearsed, timed talk that fits your slot exactly; a live product demo or a recorded one, your choice; bilingual delivery; and full permission to reshare every photo and clip from the day.
What we ask: photos or video of the talk we can use, and a credited mention. That is it.
Speaking & events
Where to find us.
Beyond the stage
Other ways we work.
Consulting for bars
Menu development, prep systems and staff standards — built on the same engine, delivered as documents your team can actually use.
Brand collaborations
Product-led content with spirits, glassware and equipment brands. We shoot it, we write it, and we credit you properly.
Workshops & training
Hands-on sessions for bar teams on balance, preparations and technique — the classroom version of the app.
Let's talk
Tell us about your room.
Slot length, audience, language, and the date. We will tell you within a day whether we are the right people for it.
